Two-Cheese ‘Pizza’ Snack

Using pitta breads as a base helps to keep the calories down while retaining all the  flavour.

Ingredients

2 wholemeal pitta breads
Jar of tomato pizza sauce
Salt & freshly ground black pepper
Pinch dried oregano
Pinch dried thyme
1 bag fresh&naked Spinach, washed and drained
1 bag fresh&naked Wild Rocket, washed and drained
150g ready grated mozzarella cheese
1 pack Sweetfire® or Sweet Chilli fresh cooked baby beetroot, sliced
100g hard goats cheese, thinly sliced or chopped into small pieces

 

Method

  1. Heat the grill.
  2. Split the pitta breads and toast the cut sides under the grill for a couple of minutes.
  3. Spread each cut side generously with tomato pizza sauce and season with salt, pepper, and a pinch each of dried oregano & thyme.
  4. Top 1 side with a layer of rocket and spinach leaves, followed by the grated mozzarella, then the beetroot slices.  Top off with the goats cheese.
  5. Grill for about 3 minutes each side until the cheese has melted.
  6. Serve with the remaining rocket & spinach leaves.
