Squash & Sweet Potato kebabs with Halloumi

Quick and simple, this is a great starter or make a light lunch with flatbreads popped under the grill to warm while you assemble the skewers.

  • Preparation time:  3-4 minutes
  • Cooking time: 2-3 minutes

Ingredients

1 butternut squash, peeled & cut into 3cm cubes
1 medium sweet potato, peeled and cut into 3cm cubes
250g halloumi cheese, cut into 3cm cubes
2 tablespoons olive oil

1 bag fresh&naked Lambs Lettuce,  washed and drained

dressing:
1 lemon – juice, and zest of half
80ml olive oil
Small bunch each fresh parsley and mint, finely chopped
Salt and freshly ground black pepper

 

Method

  1. Preheat the grill.
  2. Alternately thread the squash, sweet potato  and halloumi  onto skewers.  Brush with the olive oil.
  3. Grill for 2-3 minutes each side, turning the skewers and brushing with a little oil before returning to the heat.
  4. Mix the dressing ingredients together.
  5. Serve the skewers on a bed of Lambs Lettuce, and drizzle over with the dressing.

 

Tip:

Try brushing the skewers with a chilli or lemon-infused oil instead of plain olive oil.
