F&N Summer Bread Salad

This salad is a great way of using up good quality bread such as a baguette or tiger bread, we love it so much we don’t wait for the bread to go stale though. Ideal as an accompaniment to an impromptu BBQ as most of the ingredients always seem to be easily to hand in the summer months.

1 bag fresh & naked BIX Mix Little Leaves, washed and dried
2 slices stale bread cubed
2 spring onions sliced
4 cherry tomatoes halved
1/2 cucumber diced
Small tub black olives
Handful fresh parsley roughly chopped

1 teaspoon Dijon mustard
1 tablespoon cider vinegar
6 tablespoons olive oil


  1. Mix all the salad ingredients together.
  2. Place all the dressing ingredients in a screw top jar, shake well and pour over the salad.
  3. Leave to stand for about an hour to allow the flavours to combine.
