F&N Thai Prawn Salad

If you love prawns and spicy food this is a great easy recipe for a summer lunch; but why not take it to work or put it in a picnic. Keep the prawns and sauce separate until you want to serve it to prevent the salad leaves wilting. Raw Tiger Prawns are now readily available in the frozen section of any supermarket.

ingredients

10/12 Large Raw tiger Prawns

Marinade

2.5cm piece ginger sliced
1 teaspoon low salt soya sauce
1 teaspoon fish sauce
2 tablespoons lime juice
1 teaspoon sesame oil

Salad Ingredients

1 bag fresh & naked Lambs Lettuce, washed and dried
½ cucumber sliced
1 red pepper finely sliced
4 spring onions sliced
1 teaspoon fresh sweet chilli sauce
Fresh coriander leaves
Fresh lime to serve

method

  1. Place the prawns in a non metallic container add all the marinade ingredients cover and chill for ½ hour or preferably overnight.
  2. Heat the oil in a small non-stick frying pan remove the prawns from the marinade, cook over a high heat for a few minutes until pink in colour.
  3. Mix together all the salad ingredients
  4. Add the marinade to the prawns in the pan cook for 1 minute then stir in the chilli sauce
  5. Pour over the salad just before serving.
  6. Add the marinade to the hot prawns and cook for a further minute, remove from the heat and stir in the chilli sauce and then pour it over the Salad. Sprinkle with freshly chopped coriander and serve with wedges of lime.
