Ingredients:

  • 2 slices of sourdough bread

  • 30g butter (softened)

  • 60g cheese (mozzarella, brie, or gouda), sliced or grated

  • 20g fresh & naked wild rocket

  • 2-3 sun-dried tomatoes, chopped

  • ½ tsp dried oregano

  • ½ tsp black pepper

  • 1 tbsp olive oil (optional, for drizzling)

    Method:

    1. Prepare the Bread: Spread butter on one side of each slice of bread – this will be the side that gets toasted.

    2. Assemble the Sandwich: On the unbuttered side of one slice, layer the cheese, rocket, and sun-dried tomatoes. Sprinkle with oregano and black pepper.

    3. Toast the Sandwich:

      • Heat a frying pan over medium-low heat.

      • Place the sandwich in the pan, buttered side down.
