Lemon and Garlic Chicken with BIG Mix Little Leaves

Ingredients:

Method:

  1. Place the chicken breasts in a shallow serving dish or bowl and add all the other ingredients. Mix well and cover. Leave to marinate overnight in the fridge.
  2. Sear the chicken breasts on a hot BBQ, then move to the side or turn down the temperature on the BBQ and leave to cook for 6-8 minutes, turning and basting with the marinade. The chicken will be cooked when it feels firm to the touch.
  3. Garnish with the lemon slices and serve with a bag of your favourite mixed little leaves.
