Salmon and Avocado Salad

Full of nutrients, healthy fats and potassium it’s the perfect fuel for your training schedule!

INGREDIENTS:

  • 1 bag of fresh and naked rocket
  • 1 ripe avocado
  • 2 cooked fillets of sweet chilli hot smoked salmon
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • Juice of ½ lemon
  • ¼ tsp chilli flakes
  • 1 tsp honey
  • Salt and pepper, to taste

Method:

  1. Pile the rocket onto two plates. Peel, destone and slice the avocado and divide between the two plates.
  2. Flake the salmon and divide between the plates.
  3. In a small bowl whisk together the sesame oil, soy sauce, lemon juice, chilli flakes, honey and seasoning.
  4. Drizzle over the salad then serve immediately.
