Ingredients:

2 tsp Olive Oil
320g Sweetcorn
400g can (drained and rinsed) Kidney Beans
1 (cut into 1cm dice) Red Pepper
75g (grated) Mature Cheddar Cheese
1 (85g roughly torn) Little Gem Lettuce
1 bag fresh & naked Baby Leaf Salad, washed and drained
2 tbsp Garlic & Herb Soft Cheese
3 tbsp White Wine Vinegar

Method:

Heat the oil in a frying pan and sauté the sweetcorn until slightly charred.
Mix with kidney beans, pepper and cheese in a large bowl. Mix in the lettuce leaves.
Combine the soft cheese, vinegar and 3 tbsp water and gently toss into the salad. Serve immediately.
