Squash & Sweet Potato kebabs with Halloumi

Quick and simple, this is a great starter or make a light lunch with flatbreads popped under the grill to warm while you assemble the skewers.

Ingredients:

  • 1 butternut squash, peeled & cut into 3cm cubes
  • 1 medium sweet potato, peeled and cut into 3cm cubes
  • 250g halloumi cheese, cut into 3cm cubes
  • 2 tablespoons olive oil
  • 1 bag fresh&naked Lambs Lettuce,  washed and drained
  • dressing:
  • 1 lemon – juice, and zest of half
  • 80ml olive oil
  • Small bunch each fresh parsley and mint, finely chopped
  • Salt and freshly ground black pepper

Method:

  1. Preheat the grill.
  2. Alternately thread the squash, sweet potato  and halloumi  onto skewers.  Brush with the olive oil.
  3. Grill for 2-3 minutes each side, turning the skewers and brushing with a little oil before returning to the heat.
  4. Mix the dressing ingredients together.
  5. Serve the skewers on a bed of Lambs Lettuce, and drizzle over with the dressing.
