Prawn, Rocket and Radish Linguine Recipe

Ingredients:

  • 200g linguine
  • 2 tbsp olive oil
  • 1 garlic clove, finely chopped
  • ½ tsp chilli flakes
  • 150g cooked king prawns
  • 100ml white wine
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • 1 tbsp finely chopped parsley
  • 1 bag of fresh & naked rocket
  • Handful of radishes, finely sliced

Method:

  1. Put a large pot of salted water on to boil. Once boiling add the linguine, and cook according to packet instructions, until al dente.
  2. Meanwhile, heat the olive oil in a large frying pan on a medium heat. Add the garlic and chilli flakes and sizzle for a couple of minutes.
  3. Add the king prawns and white wine and cook until the liquid has evaporated, then turn the heat down to low.
  4. Drain the cooked linguine and add to the frying pan. Add the lemon juice and zest, salt, pepper, and the parsley. Toss to coat the linguine in the sauce.
  5. Remove the pan from the heat and mix in the rocket. Top with the radishes and serve.
